Once the dough has risen properly I prepare the baking tray. I use the clay pot called the Roman pot. I heat it up in the oven on 240 degrees celsius for 30 minutes.
Once heated I put the dough into the pot and put it back with the lid closed for roughly 25 min.
After the first 25 minutes I take the lid off and put it back for another 25 or 30 minutes to make a nice brown crust.
