"A tout seigneur tout honneur", I have to start with Champagne. Since the 6 Nations season has just started (and congratulations to our Scottish cousins!), I just wanted to share with you some warm-up stories before the Crunch.
Dom Perignon did not invent sparkling wine. The first documented sparkling wine is the "Blanquette de Limoux", a small city in the French Catalugna, in the 16th century. A hundred years after, an English scientist searching for a way to raise the alcoholic level of the wine added sugar into it. A few years after, Dom Perignon added the sugar in the bottled wine to generate a second fermentation and invented the "methode champenoise" now called "méthode classique".
