The best ever Tarka Dal
Pure joy and comfort. My go to recipe.
Peel and chop lots of garlic
Chop an onion
Fry cumin seeds in lots of butter
Boil red split lentils in lots of salted water. Add a teaspoon of turmeric.
Add onion and garlic to butter and cumin
Cook onions till they go soft and start to brown
Add a couple of freshly diced tomatoes to the onions
Add your spices; chilli flakes and ground coriander
Cook tomatoes and spices till they turn into a sauce. Takes about 15/20 mins
By now your lentils should look bright, soft and cooked, with not too much water left.
Add the tomato mix to the lentils and cook for another 15 mins to blend all the flavours. Then serve with some boiled rice, naan or parathas, some yoghurt and some fresh coriander!
