Smashing the meat. Here it comes up to your taste, what beef cuts you like more...What is ALWAYS important is the fat content of the meat and for that beautiful feeling while biting into it is SMASHING THE BALL OF BEEF! That will creat a crust but still letting the patty juicy in the inside.
